É um mês bonito com novas caras, novas aventuras, projectos prontos para florir, loucuras para se cometer. Com este tempo ficar em casa torna-se simplesmente uma contradição!<br />
<br />
Fica tempo de ir jantar fora com os amigos (ATENÇÃO: a Sagres apoia as touradas!), de constantes perguntas como " Vamos fazer um churrasco, queres vir? O que vais comer?" e de arrasar com um excelente seitan grelhado e umas saladas cheias de cores. Correr os blogs favoritos, experimentar novas receitas, novos sabores, tudo o que se tem direito e claro é tempo também e ir à praia.<br />
<br />
Ir à praia, fazer acções de sensibilização lá perto, colar uns " Eating Animals" nos stops no caminho, levar umas canetas e escrever go vegan com uns animais na sombrinha, falar constantemente com as pessoas "Cuidado não deixem os animais no carro ou quando forem passear com eles ter atenção à temperatura do chão". Qualquer coisa que não corra tão bem, sempre podemos culpar o calor!<br />
<br />
Até então a Lancheira Vegan tem sido um blog só de receitas e como sabem tenho andando um pouco desaparecida.. Ora o verão chegou em grande e por aqui também vamos sentir essas mudanças, vou voltar a publicar diariamente não só receitas mas também posts sobre as minhas andanças, dicas sobre o veganismo: ecologia, activismo e assim do género.<br />

Ingredientes:<br />
- 200gr de espinafres<br />
- 200gr de cogumelos<span class="text_exposed_show"><br /> - 1 tomate<br /> - 1 cebola roxa <br /> - 2 dentes de alho<br /> - 1/2 chávena de milho congelado<br /> - 1 chávena de aveia moída<br /> - 1 e 1/2 chávena de água <br /> - sal, pimenta e caril</span><br />

Preparação:<br />
- Comece por refogar a cebola e os soluços picadinhos em lume brando por 5 minutos.<br />
- De seguida adicione o tomate, os cogumelos laminados, o milho e os espinafres.<br />
- Numa liquidificadora, adicione a água e aveia e triture até a aveia ficar dissolvida e ficar uma nata.<br />
- Depois coloque as natas no refogado de legumes e tempere com especiarias.<br />

- começar por refogar em azeite os legumes previamente picados (cebola, alho, as cenouras e courgette). Juntar o louro.<br />

Sei que o natal normalmente é uma época "difícil" para os veganos, especialmente se é o teu primeiro natal com uma alimentação 100% vegetariana, talvez porque nós vamos todos <i>enflaitados </i>com a nossa comidinha para dar a provar e os familiares como não conhecem olham com o ar reprovador, naquela é preciso ter produtos animais para ser bom e alguns recusam se a provar. Ou, então começam com aquelas coisas: " Ah e tal, nós precisamos de comer carne, é essencial", " E, comes plantas? Vê lá que elas sentem dor" ou " Os leões comem carne, é normal", o que nos deixa bastante aborrecidos. NÃO se preocupem no próximo já vos comem a comida toda :p<br />

Dica: Não levem só sobremesas, levem também entradas, uma quiche, uns patés, visto que sobremesas sem ovos é "esquisito". E é mais fácil ir pelas entradas ;)<br />

Desde o meu primeiro Natal vegano, quando andava à procura de receitas natalícias para dar a provar o veganismo, decidi que ia adaptar a receita, na altura foi tofu com broa, para mostrar que é possível continuar a comer as coisas que gostamos sem crueldade. E, desde aí no natal tenho vindo a adaptar as receitas da consoada.<br />

Este ano cá em casa comeu-se cataplana e assim fiz a minha primeira cataplana com tofu e algas, cujo o resultado surpreendeu as minhas expectativas, já estava à espera que ficasse saboroso pois a cataplana como coze a vapor os sabores ficam com um apuramento completamente diferente, mas não estava à espera que ficasse assim, é sem dúvida uma receita para ficar!<br />

- 1/2 cebola branca + 1/2 cebola roxa<br />
- 1/4 pimento vermelho<span class="text_exposed_show"><br /> - 1/4 pimento laranja<br /> - 1 tomate<br /> - 3 batatas médias<br /> - 250gr tofu no barro<br /> - 250gr de tofu com algas<br /> Marinar: azeite, molho de soja, massa pimentão e vinha de alho<br /> - Algas arame<br /> - Vinho branco<br /> -sal, pimenta e coentros</span><br />

Preparação:<br />
- Marinar os tofus, cortados aos cubos largos de um dia para o outro com azeite, molho de soja, massa pimentão e vinha de alho.<br />
<br />
- Comece por fritar as batatas cortadas às rodelas.Reserve.<br />
- Colocar na cataplana, 1/2 cebola branca, 1/2 cebola roxa as rodelas,
os pimentos, 2 tomates, o tofu, vinho branco e as algas arame
previamente demolhadas. Feche e deixe refogar por 10 minutos.<br />
-
Depois colocar a batata frita e coentros se for preciso mais caldo
coloque mais água e/ou um pouco de molho de tomate, ela fica com um
caldinho muito gostoso!<br />
-Tempere com sal pimenta<br />

- Refogue numa panela os legumes por esta ordem: cebola, alho francês, cenoura, aipo, cogumelos.<br />
- Juntar o grão e as notas de soja, se quiser use um pouco de vinho branco ou cerveja também. Tempere com sal e pimenta<br />
- Num processador coloco a broa, 3 colheres de azeite e a salsa, até ficar desfeito<br />
- Montar num pirex, os legumes primeiro coma broa por cima<br />
- Levar ao forno cerca de 30 min a 220º<br />

- Eu coloquei logo numa forma para ir para o forno daquelas quadradas do pão de banana mas se quiser mesmo rolo, coloque o preparado em papel aderente e deixe ir ao frigorífico pelo menos uma hora<br />

-Start by cooking the lentils with cloves and bay. However if you have not cooked sweet potatoes, bake about 30 minutes at 220<br />

- Cut the onion in rings, mince the garlic and celery in chuncks. Add these to a sauté pan with a splash of water and a pinch of salt & pepper.<br />
<br />
-In a large mixing bowl, crumble about 1 cup of tofu between your hands
until it is in small chunks, resembling cottage cheese. Then, stir in
the cooked lentils, the sweet potato, sautéd veggies, a handful of chopped parsley, and
oats. <br />
-Finally, add a few tablespoons soy sauce and some ketchup to bind this
loaf together. Stir until everything is very well combined<br />
<br />
-Add this mixture to non-stick loaf pan and bake

Ingredientes:<br />
- Azeite<br />
-1/2 cebola<br />
- 1 dente de alho<br />
- 200gr de seitan ( eu usei caseiro, se usar de compre deixe a marinar e adicione um pouco de chouriço)<br />
- 1 cenoura<br />
- 3 tomates<br />
- 4 colheres de vinho branco (como não tinha usei cerveja) <br />
- folha de louro, oregãos<br />
- 1000 gr batatas vermelhas e doces<br />
- 400gr de leite de arroz<br />

- 30 gr de manteiga<br />
- sal pimenta e noz moscada<br />
<br />
Preparação:<br />
- Numa panela colocar o azeite a refogar com a cebola e o alho picado por 2-3 min.<br />
- De seguida os tomates e a cenoura ralada num 123, e um pouco de àgua, moer tudo com a varinha mágica até fazer o molho de tomate.<br />
-Adicione o seitan moído ou cortado aos quadrados, o vinho, a folha de louro e oregãos e deixar cozinhar por 10 min.<br />

For the 4th day of the avocado week we have green penne with tempeh and pineaple. Hope you like :)<br />

Ingredientes:<br />
-Massa penne<br />
- 3 abacates<br />
-Sumo de limão<br />
- cuminhos<br />
- 2cs de Natas de soja<br />
- Sal, pimenta e coentros<br />
- 2 alhos<br />
- 250gr de tempeh<br />
- molho de soja<br />
-Sumo de limão<br />
- Ananás<br />
<br />
Preparação:<br />
- Começar por cozer a massa. Entretanto faça numa taça o molho, comece por esmagar os abacates, junte o sumo de limão, as natas e os temperos.<br />
-Quando a massa tiver al dente, escorrer e adicionar o molho, rectificar os temperos.<br />
-Para o tempeh, comece por refogar o tempeh, cortado aos quadradinhos, de seguido dos alhos picados.<br />
-Quando o tempeh ganhar cor adicione os molhos e o ananás cortado aos cubos. Tempere<br />

-400gr de legumes variados( usei cenoura, pimentos, couve, cogumelos, alho francês) incluindo o abacate<br />
- "Frango" teryaki do Talho vegetariano (não sabe mesmo ao animal, don´t worry ;)<br />
- molho de soja, molho picante, pimenta e sementes de sésamo<br />

Preparação:<br />
- Numa wok, colocar azeite, os legumes picadinhos menos o abacate e o dito "Frango"<br />
- Adicione os noodles e um pouco de agua para cozerem.<br />
- Tempere com os molhos, coloque o abacate para cortar com o picante e as sementes de sésamo<br />

Para o arroz:<br />
- Arroz agulha<br />
- 2 abacates<br />
- sumo de 1 limão<br />
- cominhos q.b<br />
- 1 dentes de alho<br />
- coentros<br />

Para os cogumelos:<br />
- Azeite q.b.<br />
- 1/2 cebola<br />
- 2 dentes de alho<br />
- 1/2 pimento vermelho<br />
- louro<br />
- 200gr de cogumelos<br />
-sal e pimenta q.b<br />

Preparação:<br />
- Começar por cozer o arroz com água, sal e manteiga<br />
- Entretanto num tupperware, esmagar os dois abates com um garfo, juntar o sumo de limão, os cominhos, o dente de alho picado e os coentros<br />
- Quando o arroz tiver cozido, esperar que arrefeça e colocar no tupperware e misturar, verificar os temperos.<br />

Soup and quiche, for a day without stress!<br />

Ingredientes:<br />

P/sopa:<br />

- 300gr de batatas<br />
- 2 tomates<br />
- 300gr de legumes à escolha (cenoura,repolho, abóbora)<br />
- sal, pimenta e salsa<br />

P/ Quiche:<br />
<br />
- Massa para quiche (eu fiz a receita da bimby)<br />
- 2 courgettes<br />
- 2 cenouras<br />
- 1 alho francês<br />
- 1 pacote de natas de soja<br />
- sal e pimenta a gosto<br />
<br />
Preparação da quiche:<br />
<br />
- colocar os legumes num processador, até ficarem ralados<br />
- Num tachinho com um bocadinho de azeite refogar os legumes até
ficarem quase cozidos, juntar as natas de soja e temperar com sal e
pimenta a gosto.<br />
- Deixar arrefece o recheio e montar a quiche.<br />
- Levar ao forno cerca de 30 min depende do tamanho do forno<br />
Dica: já a minha avó me dizia, massa fria-recheio frio ou recheio quente-massa quente senão nunca fica uniformemente cozida <br />

Ingredients:<br />

For the soup:<br />
<br />
-300gr of potatoes<br />
- 2 tomatoes<br />
- 300gr of veggies (I used carrots, cabbage and pumpkin)<br />
- Salt, pepper and parsley<br />
<br />
For the quiche:<br />
<br />
- Quiche base (I used the thermie recipe)<br />
- 2 zucchinis<br />
- 2 carrots<br />
- 1 leek<br />
- 250ml of soy cream<br />
- salt and pepper<br />
<br />
<br />
How to make the quiche:<br />
<br />
- Put the veggies in a food processor, till grated<br />
- In a small pan with a bit of olive oil, put the veggies and let cook
until they are almost soft and tender, the add soy cream and stir,
season with salt and pepper!<br />
- Let the filling cool down and assemble the quiche<br />
- Pit in the oven for about 30 min at 180º<br />
<br />
Tip: for a better quiche, have in mind, when the base is cold, you
should use a cold filling, when the filling is hot use it in hot base!<br />
